Detournay Virginie is the R&D Manager for SBU chocolate – Cocoa & Sensory at Puratos. She holds a diploma in bioengineering, master’s in chemistry and bioindustries from the Université Libre de Bruxelles (Belgium). Her career at Puratos started 6 years ago. She has worked 4 years in the R&D chocolate department with a focus on development of chocolate tailor made recipes, upscaling from pilot to production and automation & process optimization.
She is currently responsible for the cocoa & sensory research activities where they support the development of the Cacao-Trace program through raw material development and thorough control of the fermentation & roasting processes.
